Simple Roasted Chicken

It’s so nice when you don’t have to do any chopping and dicing. I love when you can just throw some ingredients together, toss in the chicken and put it in the oven. This roasted chicken is delicious and doesn’t require a lot of time.


8 of your favorite pieces of chicken-bone in

2 Tbs coconut aminos (or soy sauce)

1 Tbs honey (or whatever sweetener you like)

2 Tbs red wine vinegar

3 Tbs olive oil (or coconut oil)

2 tsp crushed garlic (or two cloves pressed/chopped or 1.5 tsp garlic powder)

1 tsp dried parsley

salt and pepper to taste


1. Pre heat oven to 425

2. In a small bowl add coconut aminos, honey, vinegar, oil, garlic, parsley and mix well

3. Place the chicken in a baking dish and sprinkle with salt and pepper

4. Pour the marinade over the chicken to coat

5. Roast chicken for 30 minutes until it starts to brown. After 30 minutes remove from oven, flip chicken and spoon marinade over top. Continue baking for 10 minutes or until chicken is fully cooked.
