Chicken salad


I have been wanting to make chicken salad with homemade mayo for a while now and today I finally did it. For the mayo I used a recipe from
For the chicken, I like to boil it with a little oil, salt and pepper. Once the chicken is fully done I let it cool and just pull it apart with my hands. I like it better pulled than chopped, but you could do it either way.
When it comes to adding the mayo it also depends on preference. I add some a little at a time until I feel like there is enough so that the chicken is not dry. Once you mix in the mayo you can then add some onions, almonds, spices or whatever you like.

For the chicken salad I used:
2 chicken breasts
1/2 teaspoon Tarragon
1/2 teaspoon Garlic powder
1/4 teaspoon Sea salt
1/4 teaspoon Pepper
1/4 cup sliced Almonds
1/4 cup Red onion (you don’t have to use that much)

1. Boil chicken on medium high heat for 15-20 mins.
2. While chicken is boiling make mayo
3. Drain chicken and set aside to cool
4. Once cooled, pull apart or chop
5. And chicken to a medium mixing bowl, add desired amount of mayo. Stir to evenly distribute the mayo.
6. Add in onion, and spices and stir to make even

Romaine lettuce
Olive oil or nut oil

In a salad bowl add the desired amount of lettuce.
Sprinkle with oil, S&P
Add a couple huge spoons fulls of chicken salad and top with sliced avocado.
