Spicy Sausage Stew


  • 1lb sausage (mild or hot)
  • 2 tablespoons olive oil
  • 1 clove garlic (minced)
  • 1/2 onion (sliced)
  • 28oz diced tomatoes (fire roasted or whatever flavor you prefer)
  • 1 cup water (more or less depending on what consistency you want)
  • 1 zuchinni (sliced)
  • 1-2 handful spinach (or kale)
  • 8oz mushrooms (sliced)
  • 1-2 tablespoon fresh basil (finely chopped)
  • spices to taste (salt, pepper, cayenne pepper, red pepper flakes, etc.)


Brown the sausage in a big pan on medium - high heat. Once finished, set aside to add back in step 3.

Add olive oil to sauce pan and cook onion and garlic for 1-2 minutes on medium heat. Add diced tomatoes and water then simmer for 2-3 minutes. Add zucchini. simmer for another couple of minutes before adding spinach and mushrooms.
Step 2
Stir and simmer everything for another 2-3 minutes. Add sausage, basil, salt and pepper (to taste). You can also add cayenne pepper and red pepper flakes to give it a little more of a kick! Cook for another minute or two until mushrooms are softened. Top with Parmesan cheese and enjoy!
