Prosciutto-Wrapped Dates

Since it’s almost football season, Debbie asked me to think up some paleo-friendly tailgate foods that people could eat at a game, on their couch or just as a regular snack. So the next few posts are dedicated to snack-type foods that would be great for entertaining. This one actually came from a jewelry party I recently went to up in MD. The daughter of the host is actually in high school and created this beautiful presentation of hors d’oeuvres that included dark chocolate dipped mint leaves, homemade salsa and prosciutto-wrapped dates. I never actually got to talk to her about what she put in them or where she got the recipe, but I knew the flavors and decided to create my own.

I used Medjool Dates that I found at Trader Joe’s – they’re located in the refrigerated section by the rest of the chopped fruit and are reasonably price and HUGE. They are pre-pitted though, so when you cut them open, you’ll just have to pop the pit out. It’s really simple to do though. To fill the dates, I used a mixture of goat cheese and whole milk Greek Yogurt. I love whole milk Greek Yogurt – you really only need a tiny bit to sweetened up a dish and make ingredients creamy. It’s great with strawberries in the morning but keep in mind that a little goes a long way!

Ingredients:

  • 16-18 Medjool Dates (pitted)
  • 2 ounces goat cheese
  • 2 ounces Greek yogurt
  • Basil (couple leaves)
  • 4-5 ounces of Prosciutto

1. Combine goat cheese, Greek yogurt and basil in a small dish.

2. Cut a small slit in one half of the date (pit here if necessary) and stuff with a teaspoon or so of the filling

3. Wrap the dates with prosciutto so it almost fully covers and secure with a toothpick

Easy, quick and delicious!! The saltiness of the Prosciutto combined with the sweet honey texture of the date is incredible – the added basil and cheese sort of mellows out the bite as well. Try these for your next tailgate or as a dessert alternative!

    OMG!!! These were the best things I have ever put in my mouth!!! LOVED LOVED LOVED them!!! Of course, I popped it right in my mouth but it is definitely big enough to be two bites. For some reason, one is enough! It satisfied my sweet tooth after dinner the other night! LOVE!!
