Roasted Brussels Sprouts with Bacon and Balsamic Vinegar

1 – 1 1/2 lbs of Brussels sprouts
2-3 tablespoons of walnut oil
4 slices of bacon, diced (or 5 or 6)
salt and pepper
balsamic vinegar



Preheat your oven to 400°F. Trim the ends and any old outer leaves from the Brussels sprouts then cut them in half. Toss them in a bowl with walnut oil (or melted coconut oil or other fat), salt, & pepper. Once coated, put an even layer of the Brussels sprouts on a baking sheet lined with aluminum foil.





Add diced bacon and then put the sheet in the oven. After 10 minutes, flip the sprouts and bacon. Cook for another 10, then flip again. Cook for a final 10 (or less – (I kind of burnt mine, but it was still delicious!). As a final step, drizzle some balsamic vinegar on top then serve.
