Rotisserie Chicken Salad w/ Almond Oil

Mel gave me a shiny, brand new bottle of Almond Oil to play with and I had to post a recipe about it of course! Just a heads up – Almond Oil is great to saute or roast with (asparagus or broccolini on a sheet pan, drizzle with Almond Oil, salt/pepper and broil for 10 minutes  – soooo good) and works as a great new alternative to your typical oil and vinegar dressing. I had leftover baby spinach from my Grouper w/ Mango Salsa recipe so I decided to create my own salad with a mixture of ingredients I had in my fridge. For my protein, I choose the rotisserie chicken salad from Fresh Market that I (thanks to Debbie – shhh don’t tell cause it’s her fav) have become obsessed with. It’s filled with fresh pulled rotisserie chicken and isn’t covered and soaked in mayonnaise. If you don’t have a Fresh Market or a chicken salad you’re obsessed with, make your own! Mark’s Daily Apple has a great recipe for mayonnaise and a good recipe for curried chicken salad. You can mix any of these recipes with plain chicken and any other ingredient you typically like in chicken salad (apples, celery, walnuts etc). Here’s what I used for my salad:

1/4 pound of chicken salad

1 cup baby spinach

1 large locally grown tomato

2 strips of bacon cooked

1/8 cup of red onion

2 tbsp Almond Oil

1 tbsp rice wine or white balsamic vinegar (use sherry if you have it)

Parsley (sprinkle)

Mix all ingredients together. Mix in your oil and vinegar and season to taste. Sprinkle your fresh herb on top and mix! Great for a t0-go lunch and is entirely customizable.
